Step into the world of Amarantos!

We are having a grand reopening now that we have newly relocated within Tokyo from Akasaka to Ginza.

Our name, Amarantos, is Greek and related to amaranthus flowers, meaning renewal and permanence. It symbolizes my culinary philosophy of blending the modern and the classical.

Respect for French culture and the preciousness of the Japanese psyche. I hope to combine these together to draw out the best in each, to serve the best ingredients prepared with the best culinary methods, all rooted in my lifetime of culinary experience for everyone’s enjoyment.

I also hope above all that the smiles my cooking brings to people's faces lead to good health.

To drive this occasion even further forward, I asked Yasumichi Morita of GLAMOROUS co.,ltd., who has been working successfully both in Japan and abroad, to design the interior. He has created a wonderful space unlike anything else in the world that captures my love for my restaurant.

Now with a passionately crafted new interior design, I hope you will come enjoy the world of the newly reborn Amarantos.

April 1996 - Learned the basics of Western confectioneries from the owner and pâtissier of La Bamboche, a Western confectionery shop located in Kinshicho, Tokyo


January 2000 - Learned French Burgundy cuisine under chef-owner Kikuchi at Le Bourguignon in Nishi-Azabu, Tokyo


February 2002 - Learned pork and charcoal-grilling techniques for a short period at Vinpicoeur in Ginza, Tokyo

October 2002 - Learned authentic French cooking under Yasuharu Nakamura at Au Gout du Jour in Kojimachi, Tokyo


June 2005 - Visited France. 

Worked at Laurent (two stars, Paris), La Violon d'lngres (one star, Paris), Palais Royal Restaurant (bistro, Paris), and other establishments before being chosen to serve as sous-chef at Les Ombres (museum restaurant, Paris). Involved in the creation of Les Ombres’s menu from the restaurant's founding.

April 2007 - Returned to Japan. Served as chef at Au gout du jour Nouvelle Ere (Marunouchi, Tokyo), which maintained a one-star Michelin rating for seven consecutive years


May 2014 - Became chef at Azure 45, the French restaurant at The Ritz-Carlton Tokyo, which maintained a one-star Michelin rating for six consecutive years

In October 2021, he launched his own independent restaurant, Amarantos, in Akasaka, Tokyo, which maintained a one-star Michelin rating for three consecutive years beginning in 2022

March 15, 2025 - Amarantos relocated from Akasaka to Ginza Go-chome

Yasumichi Morita; Designer/CEO of GLAMOROUS co.,ltd. 

Starting with a project in Hong Kong in 2001, he has successfully expanded his appeal to New York, London, Paris, Doha and other major cities. He has not only been an interior designer but has also enthusiastically expanded his career with his talents in a wide variety of graphics and products. He completed the commercial environment design for "Tokyu Plaza Shibuya" in the Shibuya district, which is said that undergo a massive redevelopment once every 100 years. He also designed "DADAÏ THAI VIETNAMESE DIMSUM”, "NEW LIGHT" in MIYASHITA PARK, and "MYDO" in W Osaka. Recently, he has been actively involved in community development projects in Japan. He has branched out as an artist, and his solo photography exhibitions have been held annually in Paris since 2015. Currently, he is offering the online salon "Morita Chamber of Commerce".

The Designer's Vision

The name of this shop, amarantos, is Greek for "an imaginary flower that never withers".

The restaurant, which aims to take the one-Michelin-star French chef Miyazaki to even
greater heights, is filled with plant-themed designs.

The flowers that will shine forever are expressed with plates from the Mille Nuits collection
by Baccarat, the king of French crystal.

The crystal cut shines and sparkles with the light and continues to decorate the space forever.
